Known in hindi as 'Gajar', the carrot is a root vegetable, tapering at end, usually orange in colour and has a crispy taste and texture when fresh.

 

Choose well-shaped, smooth, firm, crisp carrots with deep colour and fresh, green tops. Avoid soft, wilted or split carrots

fat free, saturated fat free, low sodium, cholesterol free, excellent source of vitamin A, good source of vitamin C, low calorie

A serving of carrots (one medium carrot or ½ cup chopped) will provide about:

210% of the average daily recommended amount of vitamin A

10% vitamin K

6% vitamin C

2% calcium

·         Antioxidants in carrots, including beta-carotene, may play a role in cancer prevention due ton their antioxidant power in reducing free radicals in the body.

Store carrots in a plastic bag in the refrigerator. Remove the tops if you're not going to be eating them right away, as the greens will pull moisture from the roots.
